Fasting for religious occasions or for personal health benefits is quite common in India. But it should not be devoid of flavour and taste.Sometimes we take Sabudana kheer during fasting.No doubt it is delicious and healthy too but its time to try an another delicious recipe of healthy and tasty Sabudana Khichdi. It's very simple to make and a satisfying dish that is sure to tickle your taste buds making fasting a wonderful experience.
Sabudana Khichdi, also popular as Sago Khichdi, is a well known fasting recipe in India, during festivals like Navratri. It's a very nutritious dish that consists of soaked sabudana cooked with various ingredients to create a flavourful meal. It also gives a quick energy boost during fasting hours.
The ingredients needed to make this are as follows:- Sabudana, haldi powder, ginger, tomatoes,potatoes , beans,carrots,peanuts, green chillies,cumin seeds, curry leaves,a pinch of ginger paste ,ghee or oil,lemon juice and salt and sugar to taste.
Let's know the steps to prepare Sabudana Khichdi perfectly:-
- Soak the Sabudana:- Wash the sabudana pearls properly and soak them in water for a few hours until they become soft. Drain any excess water.
- Sauté the Ingredients: Take a pan, heat ghee or oil, add cumin seeds, crushed peanuts, and curry leaves. Sauté till the peanuts turn golden brown colour.
- Add Potatoes and Spices:-Add diced potatoes,cut pieces of carrots, beans, chopped tomatoes and green chilies. Cook until the vegetables are tender. Season with salt.
- Add Sabudana:-Gently add the soaked sabudana to the pan.Add salt ,a little ginger paste and a little pinch of sugar to taste.Stir well to combine all the ingredients.
- Cook Thoroughly:-Cook the khichdi on low heat for about 10 -15 minutes, stirr it often, until the sabudana pearls turn transparent.
- Finish with Lemon Juice:-Squeeze fresh lemon juice over the khichdi to give it a zesty flavor.
